Forest Honey is actually made form honeydew, the secretions of aphids feeding on tree sap in pine, oak and beech forests.  Honeydew or Forest Honey is dark amber or nearly black and has a strong, resinous flavour that compliments savoury dishes.
Forest Honey is a good source of antioxidants and has antibacterial and antifungal properties.  It is believed that it is helpful in healing wounds, sore throats and with digestive issues.
